  • Farina: 83% of the wheat kernel. The source for white flour. Using farina alone, you lose all B vitamins and iron.
  • Bran: 14% of the wheat kernel. Included in whole wheat flour but often removed in other hot cereals. Contains 86% of the kernel's niacin.
  • Germ: 2-1/2% of the wheat kernel. Contains a high percentage of thiamin (Which helps in the digestive process). 100 years of whole grain tradition! The occasional black hulls that are sometimes seen in Roasted Wheat are the result of a few wild buckwheat kernels whose tender hulls scorch easily during the milling process.
