Great for heating left-overs
I purchased the 8.25 & 10 inch pans especially for searing steaks after hot-bath cooking. Although I have not had the chance to try them out, I did use the smaller pan to reheat some quesadillas whose outer shell had become soft and soggy. Very excited they became crispy once again and the inside cheese melted without burning the shells...and the cheese that ran out and appeared to be stuck in the little "grates" peeled right off. Can't wait to try steaks during the holidays!

It's absolutely true that the cooking oil stays in the center of the pan! I've browned a salmon filet and a steak and both of them browned and cooked perfectly.
