Buckwheat Pancakes and Waffles - safe for diabetes

I am a type II diabetic and have avoided pancakes and waffles from standard store brands. This mix from a company that I've only experienced with bread maker machines is a pleasant surprise. Even though some sugar is present, it does not create a fast or lasting spike. I use 2 cups mix, 1.5 cups water, two TBSP (vegetable) oil, and an egg, and I get two large waffles from it. The bumpier the mix, the better the texture of the waffle, so don't over mix it.
