Great for Oven Baking, Not for Flatbreads

I use this flour for focaccia, loaf‑pan bread, artisan bread, and other baked goods, and it works well for anything that's baked in the oven. However, if you're making flatbreads or anything cooked directly on a pan, I would avoid it. The flavor comes out very dry and dull. I usually let this flour ferment with yeast overnight. Anywhere from 6 hours to 2–3 days, and without that long fermentation, the taste is very plain. For flatbreads, I prefer King Arthur, which gives a much better flavor and texture. In my experience, this Great Value flour just isn't great for stovetop cooking, but it's fine for standard baked breads.

Great flour for everyday baking

As a hobbyist baker who spends an inordinate amount of money on ingredients each month, this has become one of my easiest choices to make. This is a great workhorse flour at a fantastic price, and after buying many hundreds of lbs of this flour, I can truly attest to consistency across the product insofar as quality. My only small qualm is the thickness of the packaging, given that it tends to split on moving, and this leads to unnecessary waste, cleanup and frustration. Given that this flour is offered in a 25lb bag size, maybe some additional consideration should be given to its packaging.
