Do not eat raw muffin batter. You Will Need: For Streusel: 1 tablespoon butter, softened. For Muffin Batter: 2/3 cup milk; 1/4 cup oil; 2 eggs. To soften butter directly from refrigerator, microwave 1 tablespoon on High 5-10 seconds. 1. Heat oven to 425 degrees F (or 400 degrees F for dark or nonstick pan). Place paper baking cups in 12 regular-size muffin cups, or grease bottoms of muffin cups with cooking spray or shortening. (For best results, use paper baking cups.) 2. Stir streusel mix and softened butter, in small bowl, using fork, until crumbly; set aside. 3. Stir muffin mix, milk, oil and eggs in medium bowl just until blended (batter will be lumpy). Divide batter among muffin cups (each about 2/3 full). 4. Sprinkle streusel over batter in each cup; press lightly. Bake 15 to 20 minutes or until golden brown. Cool 5 minutes; carefully remove from pan (if you did not use paper baking cups, run knife around edges of cups before removing). Cool completely before storing.
