Hob - From Ambient - In a large saucepan with tight fitting lid, bring 2 ¾ cups (22 oz.) of water to a boil. Add one tablespoon of butter or margarine (optional), then one package of Vigo Red Beans & Rice, stirring while boiling for one minute. Cover saucepan tightly. Reduce heat to simmer, cook for 22-25 minutes. Fluff and serve. Microwave - From Ambient - Combine contents of this package, 3 cups (24 oz.) hot tap water and 1 Tbsp. butter or margarine (optional) in a 1 ½ Qt. microwavable casserole dish. Cover and microwave on High Setting for 22 minutes*. Stir. Let stand 5 minutes. Serve. *Cooking times may vary depending on power of microwave. The "Big Easy" Recipe. *Serving suggestion for a one-dish meal: Add 1/4-1/2 lb. sliced. smoked sausage or smoked ham at the same time rice is added.
