Dinner turned out great with these noodles! It was my first time cooking glass noodles and I was worried 1 package would not be enough but I was wrong — it was plenty for a family of 3! Of course the chicken and vegetables helped too. Boil some water then pour it over the noodles then let them soak for 10-12 minutes. Comes out great!

Glistening glass looking noodles, how fun!

I love the look of clear noodles in a noodle dish or stir fry. They don't get in the way of the sauces I make, and they slide right down your throat, though they're a bit hard to eat with a fork. We find it's easier with chopsticks. I have a set with a crosshatch texture near the chopstick ends, that grips the glass noodles really well. If you haven't tried this kind of noodles in a soup or stir fry, give these a chance. We don't much care for sweet potatoes, but that flavor isn't noticeable here.
