Wash beans with clean water. We thank youfor caring enough To buy siler's selected beans. Quick soak: placewashed And sorted beans in a large saucepan with 6 cups Of water perpound Of dry beans. Bring To a boil And cook for 2 minutes. Remove fromheat, cover with lid, And let stand for 1 hour. Discard soak waterbefore cooking. Cover with fresh water. Cook until tender. Traditionalsoak: place washed And sorted beans in a container with 6 cups water perpound Of dry beans. Cover container And let stand overnight (or 6 To 8hours). Discard soak water And cover with fresh water. Cook untiltender. Cooking: conventional: cover presoaked beans with 3 parts freshwater To 1 part beans. Boil 10 minutes, reduce heat And simmer untiltender (1 1/2 To 2 hours). Pressure cooker: cover presoaked beans withone inch more fresh water than beans. Follow pressure cookermanufacturer's instructions And cook for 12 To 15 minutes. Tip andhints: salt tends To toughen beans during cooking, so add at end ofcooking. Add any acid Ingredients (tomatoes, lemon, vinegar, or wine) atthe end Of cooking. Acids make beans firm. Soak large quantities ofbeans And freeze recipe size packages To save time in the future. Toreduce undesirable gas, pour off soak water And replace with freshwater. You will not lose any real nutrients And it works.

These beans smell delicious as soon as they start to cook. I soaked overnight. After cooking 1 hour I still had hard beans. Transferred to pressure cooker and finished in 20 minutes. The pressure cooker is the only way. Don't have to soak. Done in 30 minutes.
