Beef & Barley SoupPrep time: 15 minutesCook time: 45 MinutesMakes 8 servingsHeat oil in large saucepan on medium-high heat. Add leek and carrot; cook and stir 5 minutes or until tender. Add mushrooms; cook and stir or until lightly browned. Stir in beef and remaining ingredients. Bring to boil. Reduce heat to medium; simmer 30 minutes or until barley is tender.

[This review was collected as part of a promotion.] I really like the flavor of this as I mixed half of the beef with half of the vegetable broth for my pot roast. I really appreciate the clean ingredients and I like that it organic. It's not overly salty either. The packaging is convenient as you could throw it back in the fridge and use it on a different day.
