Incredibly delicious!

I made this marinade according to directions, and it turned out wonderfully. As you can see from the photo, I used 2 boneless skinless chicken breast pieces--but I could have easily used 4. The package says to use 2 lbs of meat. I used my trusty cast-iron skillet to grill the chicken indoors, and there are a couple of things I would do differently: in order to get more flavor into every bite, I would hammer the breast meat into a larger, thinner shape before adding the marinade (put the meat into a freezer bag, or use several layers of plastic wrap and/or waxed paper, and use a mallet or the flat side of a tenderizer mallet). Alternatively, cutting the meat into strips before marinating and cooking would accomplish the same thing. The flavor is amazing and restaurant-quality. I would have liked more of the cilantro flavor to come forward, but the citrus and other flavors are truly tasty. There is an alternative recipe on the package that calls for orange juice instead of water, and I will try that next time.

Loved it! I bought 2. The first one I followed directions and used 2 tablespoon of vinegar. The second one I did one tablespoon of vinegar, one tablespoon of lemon juice and it was even better. Very good either way.

Wonderful Flavor

I tried the Grill Mates Baja Citrus Marinade. I thought it sounded just right for fish so I used it on some fresh Tilapia. I did not grill it. I baked it instead. The marinade instructions call for oil. Since I am watching my fat intake AND I did not have time to marinate, I simply rubbed the spice powder directly on the fish. I laid lemon slices over the spice-rubbed fish and slow-baked it. The result was quite tasty. I could definitely detect the citrus taste of the rub which seemed to go exceptionally well with the fish. I will definitely be trying this Marinade again and will certainly look over the other flavors available. There is a recipe on this packet for an orange marinade, adding orange juice. That sounds so delishious I will probably try that as well. Try it, you'll like it!
