I watched videos of how to brine a brisket for pastrami, and they said to use this. I am currently brining a brisket with these juniper berries, and I will have to let you know later how it turns out. These are fresh berries that need to be stored in a cool and dry area. I put them in the grinder and ground them to powder or so and added them to my brine. We'll see how it comes out.

NOT traditional Juniper

After a lifetime of familiarity with juniper berries due to it being an often-used ingredient in my family's German cooking, THIS is not traditional juniper. The aroma and flavor are vastly different; it's dull and woodsy. Does not smell like traditional Juniperus communis at all. The package is marked that the juniper is from Albania. If you require that traditional pungent, bright, crisp juniper aroma and taste, do not buy this. After a bit of research, I discovered "The juniper that grows in Albania is Juniperus communis, which is also known as the common juniper. Juniper berries from Albania are known for their distinctive piney aroma and earthy flavor." This batch lacks the piney aroma; it's like tree bark. I ordered this juniper to use in German recipes, but this juniper lacks the necessary flavor profile. The British absolutely could not make a proper gin from it. This Albanian juniper is probably good for something; I'd be interested to know what that is, but at the moment, I have no idea what I'll do with this.
