Easy Chicken Noodle Soup with Egg Pasta Dumplings

Here's a family-favorite that's ideal for a relaxing winter evening, with juicy, melt-in-your-mouth chicken and light, fluffy dumplings.

Ingredients:

For the Broth:

  • 3 tablespoons vegetable oil
  • 2 pounds bone-in chicken pieces
  • 6 cups water
  • 1 cup onion, sliced
  • 2 teaspoons salt
  • 1 celery stalk, cut in half, quartered
  • 1 bay leaf
  • 3/4 teaspoon dried thyme leaves
  • 1/4 teaspoon freshly ground pepper

For the Noodles:

  • 6 oz No Yolks Dumplings
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 3 tablespoons all purpose flour
  • 3 teaspoons water
  • 1 lemon, juice and zest, if desired

Directions:

For the Broth:

  1. In heavy 5-quart saucepan over medium heat, heat oil; brown chicken. Drain off fat.
  2. Add water, onion, celery, salt, bay leaf, thyme and pepper; heat to boiling. Reduce heat; simmer, covered, 40 minutes or until chicken is tender.
  3. Remove chicken; discard chicken skin and bones, celery stalk, and bay leaf. Cut chicken into bite-sized pieces and set aside.

For the Noodles:

  1. Heat broth to boiling; add uncooked pasta, carrot and celery. Boil, uncovered, over medium-high heat 10 minutes or until pasta and vegetables are tender.
  2. Mix flour in water.  Stir flour mixture into broth and cook, stirring constantly, 1 minute or until thickened.
  3. Add reserved chicken and lemon juice and zest, if desired, to dumplings mixture and heat through.

My go to, no fail noodles that retain their shape when cooked and don't turn to mush when reheating leftovers. The dumpling size is great for holding more sauce and I can get away without making homemade dumplings in a pinch when I am pressed for time. I use them more for creamy beef stroganoff, but would love to experiment with a cream-based, lemon-pepper chicken after discovering how good Mrs Dash seasoning has such a lemon pop to it. I think that would go great with these noodles or even a quick curry. I have even used these for a meal with just butter, salt and pepper when struggling to find something my stomach could keep down without making me nauseous when I wasn't feeling well. These noodles are just a great, quick, comfort food when your mom is no longer around to give you that hug when you're sick and you're not feeling up to roasting a whole chicken.

Great Dumplings!

I really love using these pasta made dumplings for when I fix chicken and dumplings. It's so easy to use and tastes great! Love to use this on days when I just don't know what to fix. This makes a hearty and great tasting meal. I just add a vegetable on the side and maybe even a can of cranberry sauce as an extra tasty addition.
