8-10 lb apples (Suggested Apples: Choose apples that are naturally sweet, like Red Delicious, Gala, Fuji, Winesap, McIntosh, Yellow Delicious, Mutsu, Pink Lady, Honeycrisp. Always use a variety when canning apples); sugar (see recipes for amount); water (see recipes for amount); 1 pouch Mrs. Wages Spiced Apple Mix. Prepare home canning jars and lids according to manufacturer's instructions for sterilized jars. Keep jars hot before filling. Applesauce (Makes 3 Quarts): Wash, core, and peel 8-10 lb apples. Cut into halves or quarters. Combine prepared apples with 2 cups water and bring to a boil (212 degrees F). Cover pot; reduce heat and simmer (200 degrees F) for 30 minutes. Puree apple mixture and measure number of cups before returning to pot. Add 1/4 cup sugar per 1 cup puree. Stir to dissolve sugar. Stir in contents of Mrs. Wages Spiced Apple Mix. Heat mixture just to a boil (212 degrees F). Remove from heat. To Process (Processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude), carefully ladle hot apple mixture into hot jars. Pack tightly leaving 1/2 inch headspace. Remove air bubbles; wipe rim, cap and process pints for 15 min; quarts for 20 min. Cool overnight. Note: For chunky applesauce, wash, core, peel and finely dice or grate apples. Follow cooking instructions, do not puree and proceed to sugar addition step. Apples Slices in Light Syrup (Makes 3 Quarts): Wash, core, peel (optional) and slice 10 lbs. apples. Place in a large container, cover with water and set aside. Combine 5 cups of water, 2 cups of sugar and contents of Mrs. Wages Apple Seasoning Mix in a large sauce pan. Stir well to dissolve sugar. Heat to boil (212 degrees F), and then remove from heat. To Process (Processing time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude), pack apples into hot jars. Pack tightly leaving 1/2 inch headspace. Carefully pour hot sugar syrup over apples leaving 1/2 inch headspace. Remove air bubbles, wipe rim, cap and process pints for 15 min; quarts for 20 min. Cool overnight.
