Gluten sensitive, but….
I noticed when I visited Italy that I could eat all of their gluten items without a problem. Our art school chef explained that U.S wheat flour has an over abundance of gluten.

I can make food with this flour without having any allergic reactions to it. Unfortunately, this is not the case with any wheat products I purchase from inside of the USA. Incredibly grateful for this product, I have already ordered 5 more bags for holiday baking and am very excited!

My wife has a gluten sensitivity but she can tolerate this kind of flour really really well. She cant go crazy on it at once but she can actually enjoy some home made biscuits, breadsticks, etc. Really enjoy this flour.
