This family recipe blends blackeye peas, onions, jalapenos and a brine that has been passed down in the McCall family since the 1800s. Follow the Southern tradition by serving Hoppin' John over rice on New Year's Day, or heat and eat this recipe as an easy side dish any time of year. This heart healthy blend of peas and mixed vegetables is also a great addition to gumbo and chicken soup. With low saturated fat and no added cholesterol, these gluten free vegetables are a great choice for Southern style dinners. Canned vegetables are also a good source of fiber and protein. For generations, the Margaret Holmes kitchen has made home-style canned vegetables using tried-and-true recipes.
