Lao Gan Ma (老干妈) produces the most popular brand of Chinese szechuan (sichuan) hot sauces throughout China with roots in Guizhou. In 1984, Lao Gan Ma Chili Sauce was introduced by an ordinary Chinese woman named, Huabi Tao. Over 1.3 million bottles of the sauces are produced daily. Goes great on spicy noodles, or as a dumpling sauce for dipping. The tongue numbing flavor is called "Mala" and has a lingering feeling that really hits. This is the best spicy chili crisp. It's always crunchy and incredibly satisfying. It goes well with everything from noodle bowls to grilled pork loin to scrambled eggs. And I love the piggy spork that came with it; it really helps to get to the bottom of the jar and scrape up the chili, reuniting it the oil that tends to want to rise to the top.
