You Will Need: Dough: 3 tbsp vegetable oil (e.g. sunflower oil), 7/8 of a cup (210 ml) water. Food Grade Lye: 3-1/2 tbsp water. Preparation: Preheat oven to 400 degrees F (200 degrees C). Baking Pan: Regular cookie sheet. Cover cookie sheet with parchment paper. Dough: Combine base mix and dried yeast in a mixing bowl. Add 7/8 of a cup (210 ml) lukewarm water and 3 tbsp vegetable oil. Beat with an electric mixer (dough hooks) for approx 3 minutes until dough is smooth. Cover and leave to rise for about 30 minutes at a warm place. Knead yeast dough briefly with hands to release air, form a dough roll and cut into 8-10 pieces, using a knife. You can form bread rolls, sticks or pretzels, as you desire and place them on a prepared cookie sheet. Food Grade Lye: Pour 3-1/2 tbsp (50 ml) water into a mixing bowl, gently whisk in the food grade lye mix and brush it evenly over all dough pieces. Let dough rise for another 20 minutes. Preheat oven. Sprinkle the coarse salt on top and bake as directed. Bake: Bake German Pretzels in preheated oven approx 20 minutes on middle rack, until golden brown (baking times may vary depending on oven type and altitude).
