Jiffy makes good cornbread mix. The little blue box has been my go to cornbread for decades. A pan of Jiffy goes good with blackeye peas, or chili. A very large pan of Jiffy corn bread goes into my holiday stuffing every year. I always used regular, until recently, when I bought the Honey flavor, due to availability issues. Almost by mistake, or by pure chance. If you like sweet, this is for you. My family liked it a lot. I was worried that the sweetness would be inappropriate or overpowering for stuffing, but no, it was actually very good. Bakes up fluffy soft every time too. Just pay attention to the expiration date. If its close, or past, it will be flat and dense. Corn bread is not forgiving. But, if you catch the date before you bake, you can save your cornbread by adding a spoon or two of baking powder to the dry mix first. That applies to cornbread mix in general.
