Farberware 7-inch Butcher Knife with Self-Sharpening Blade Cover, Sharp Kitchen Knife, Black

I bought this on a whim as I needed a medium-duty breaking knife from time-to-time for some home butchery and sausage making pre-grind prep... this knife proved to be above and beyond my expectations for is handling and dependability... not to mention the razor's edge sharpness it has... and appears to maintain with every use... and even though the cover has a built-in blade sharpener... I don't use it by carefully extracting and inserting the knife holding it clear of the sharpener... for knife sharpening I use a hand held diamond dust coated sharpener similar in design of a knife steel... and as a matter of practice I always take the steel to a blade after each use... If you are looking for a good knife at a great price point then I would recommend this one... I have used this knife to cut through cartilage and tougher cuts of beef (raw corned beef brisket) to prep it for semi-freezing and grinding for sausage making and it slices through each like a hot knife through butter...
