Cooking tips. Traditional method: in a large pot add 6 cups Of coldwater To each pound Of drained And rinsed soaked peas. Add a tspshortening or oil And 2 tsp salt. Boil gently with lid tilted untildesired tenderness is reached, adding water To keep peas covered savorymethod: follow traditional method above, but substitute 2 tsp onion saltand 1/4 tsp garlic salt for the plain salt. Add 1 tsp chicken stock baseor 3 or 4 chicken bouillon cubes And 1/4 tsp white pepper cooking drypeas in the microwave: wash And sort peas. For each pound Of peas, add 8cups Of water in a 5-qt casserole along with any seasonings called forin the recipe. Microwave at full power for 8-10 minutes or untilboiling. Cover with plastic wrap And/or casserole lid. Let stand 1 hour.Stir several times And add hot water as needed To keep peas covered.Cook at full power for 8-10 minutes or until boiling; reduce power level50% And cook another 15-20 minutes or until tender. Peas may also besoaked overnight And then cooked at full power for 15-20 minutes oruntil tender. Wattage And cooking temperatures Of microwaves vary.Always consult the recipes And temperature directions developed for yourmicrowave by the manufacturer note: this product is grown in nature'searth And handled by some mechanical methods. Perfect blackeyes
The last brand of blackeyes I got split and turned to mush almost as soon as they started to cook. This is a good brand. The beans stay firm but tender and hold their shape. We soak for about eight hours (for health!), rinse and drain, then cook. Even in the Instant Pot, the beans hold their shape. They taste pretty good, too.
