Bob's Red Mill Vital Wheat Gluten Flour is a kitchen staple for whole-grain bakers and vegetarians! Gluten is the protein found in the endosperm of the wheat berry - the endosperm is milled into this fine flour, resulting in 75-80% protein. Adding Vital Wheat Gluten to whole grain breads or breads made with coarse grinds such as artisan bread loaves will improve the elsasticity and texture of the loaf. Vital wheat gluten can also be used to create meatless entrees such as seitan or used to bind other vegetarian items like "meat"balls and veggie burgers. You'll see how elastic the flour is just be adding water.

Best Vegan Waffles
Very "nutty" in flavor so be aware you may need to use twice or thrice your normal extract or spices depending on how much you like it's natural aroma, but it's totally worth it. This flour made the best vegan waffles I've ever had and even though it's more expensive than other flour, I think it's worth it because I'm able to skip making vegan sausage to go with them! Low on bread or tortillas? Just add water make a savory flatbread like you would a pancake. This purchase has proven to be a very helpful investment for me.

Great gluten free option.
Purchased for gluten free baking after I read a few blogs praising its high protein and nutrient value. I also saw some were "toasting" prior to adding to baked goods achieving a nuttier flavor. I tried it and it works great. Plan to make this a permanent part of my personally formulated gluten free flour blend.
