After preparing the soup according to directions, it seemed to be a little thin. I had a couple of leftover baked potatoes in the fridge so I peeled them and cut into small dice and added it in the soup. Turned out pretty darn good. I prefer a thicker soup so with the addition of the extra potatoes I was very pleased. I can imagine adding some cheese, broccoli, or (back to the leftovers) even some cut up chicken. It could be a different soup every time you made it without having to start from scratch. The cost is reasonable and with the added bonus of using up some leftovers—so I didn't end up tossing them out— I think this is a good buy.

Delicious potato soup!!! We add 2-3 potatoes, chopped/diced into the water as soon as it starts boiling, then whisk the soup mix in. I've used both yellow potatoes and russet potatoes, both are equally good. Let the soup return to a boil, simmer for about 15 minutes, and then add salt, pepper, chopped green onion, crumbled bacon, shredded cheese (extra sharp white cheddar is the best in it), and chives. Sooooo good. Be careful though, stir it well and it burns very easy!! But it's delicious next day too. Super super yummy for lunch or for dinner. Perfect on a cold winter day. If you add the potatoes like I mentioned, you can easily feed a family of five or six with this. We do that and add extra cheese, bacon, and chives on top, and serve with hot crusty french bread. yum!!!!!
