Without a doubt one of Mexico’s most beloved dishes is Pozole. This dish was passed down from our Aztec ancestors who used this meal as an offering to their God Xipe Totex who was the God of fertility and sacrifices. These offerings were done in large social events and as a result the dish was designed to feed the masses and not for consuming in solitude. To this day this tradition remains alive and well. Pozole is prepared for special events such as holidays, birthdays, weddings, etc. If you see a pot of Pozole cooking, there is 99.9% chance that friends and family are on their way. The star ingredient in Pozole is of course corn. However not just any type of corn will do for this dish that was once used as an offering for the Aztec Gods. The required verity for this dish is a variety named Cacahuazintle. This variety produces kernels that are larger than typical corn and are either white or purple in color. These kernels once boiled will burst transforming in to a beautiful flower like shape that adds a unique texture to the dish.
