Merten & Storck Pre-Seasoned Carbon Steel Black Frying Pan, 8-inch

I LOVE this pan! I only use healthy pans, cast iron and stainless steel. But the older I get the heavier they are! This pan has a good weight, a little heavy but not like the others mentioned. The handle is thick and feels really sturdy! Follow the directions for before use. You'll want to give it a really hot soapy wash to get rid of the wax coating protecting it. I followed the directions and the first cook in it was by my grandson who made fried egg whites. It cooked evenly and did not stick at all! It's just like using a cast iron or stainless steel, must get hot first, and when a few droplets of water are put in, they dance around the pan like they are floating, then you know it's ready for a bit of oil and you can start cooking. Loving it so far and I hope it lasts forever!

I'm new to carbon steel pans, but very familiar with cast iron. The care for both are basically the same, and cooking is similar but the heat will change more rapidly in the thinner and lighter carbon steel. This pan has performed flawlessly. A little oil and butter and a fried egg slid around in the pan like non-stick. This pan came pre-seasoned and it works great. Easy to clean with mild soap and hot water. For many things, the pan will just need to be wiped clean. I have purchased 2 others from different makers, 1 pre-seasoned and one that did not come seasoned. So far, the Merten %26 Storck has been my favorite. Carbon steel cookware is indestructible and can be passed down through generations, just like cast iron. Throw the non-stick stuff in the garbage and learn to use carbon steel, much better cooking results! That's why the pros use this stuff.
