Rich, well-balanced, nutty flavor

This single-varietal olive oil always tastes fresh, and has a well-rounded flavor, nicely balanced between buttery and lightly peppery. It really shines in vinaigrettes and as a dipping oil. For sauteeing, I use the California Olive Ranch blend, saving the Arbosana for those dishes where its nutty, well-rounded flavor won't be masked by other ingredients. But that said, I recently used it for an olive oil cake (America's Test Kitchen recipe), and the resulting cake was excellent.
