About this item
Product details
Premier Classique formerly Montrachet. A strong fermenter with good alcohol tolerance that is useful in producing dry, full bodied red and white wines. Will leave a wine with intense color and excellent flavor complexity while preserving tannin content. This yeast will produce hydrogen sulfide gas in the presence of excess sulfur compounds and therefore should not be used to ferment grapes that contain residual sulfur dust. Temperature range: 59-86 F. Alcohol Tolerance: 13%.

Great yeast for dry wine
I've been making small batches of homemade wine for a little while now.I started making it with regular bakers yeast and couldn't figure out why the wine was never dry enough,further research found that regular yeast dies off from the alcohol that's produced before it can get dry. This yeast is designed to stay active during the entire fermentation process resulting in a dry wine.If you like dry wine,use this yeast,if you like it sweeter use the bakers yeast.

VERY strong yeast! I definitely recommend by starting with a smaller amount. Otherwise, your fermentation could fizzle out of the jar and make a big mess!
