KAF GF Pancake Mix

I've used this gluten free pancake mix since it was introduced 3 yrs ago and we just love it as well as the entire family. I add to the mix when making half the recipe: 1-1/2 T Vanilla (seems like a lot but makes them taste great) 1 t Almond Extract 1-1/2 T Cinnamon For the oil I use Butter, for the liquid I use Buttermilk. I bake/fry them in my electric skillet (its a big GE one I've had a long time) at 350 deg using COCONUT OIL which gives each pancake a crispy edge (using probably 3-4 T coconut oil). Like to use the electric skillet because then I can control the temperature and the pan is not either too hot or too cold. The pancakes will absorb almost all the coconut oil on frying/baking and, of course, coconut oil is really good for you in a whole lot of ways. I portion each pancake out using a 1/4 C soup ladle. I make them every Sunday for our special breakfast. Have made them using frozen blueberries and they're great that way as well.
