For a lighter, airy dough, use 50% of Hulled Buckwheat Flour and 50% of rice, tapioca, or nut flour. Such a combination is good for baking breads, cakes, muffins, and pies. Unfortunately, Buckwheat Flour doesn't work as a complete Wheat Flour substitute, however, you may easily swap 25% - 50% of all-purpose flour with Buckwheat flour and get almost identical results.
