The presence of micro holes lets the shortcrust pastry hang onto the frame, avoiding the border collapsing during baking and a perfect browning of the basis. Pavoni Italia and Gianluca Fusto present the innovative Progetto Crostate, the new way to conceive the tart. The tart becomes a masterpiece. From the idea developed in 2007 by Fabrice David, Pavoni Italia with Chef Gianluca Fusto have developed a system to create easily tarts that are amazing to the taste and to the view.
