If your childhood was anything like mine, the birthday cake was the most eagerly anticipated event when the big day rolled around. As a decorator who is passionate about kids’ novelty cakes there is nothing more rewarding than seeing the excitement on a child’s face when they see their cake for the first time. The idea of continuing this surprise and excitement throughout the cake cutting and eating process is priceless.

So, when I was asked to compile 50 of my favourite cakes and cupcakes with surprises inside my inner child was delighted at the opportunity to share with you how easy it is to create a surprise inside a beautifully decorated cake. And because surprise and joy are not limited to children’s celebrations, there are a few surprise-inside options for adults and the more sophisticated palates!
