It adds distinctive yellow-orange color and rich flavor to marinades for chicken, pork or seafood, as well as to tamale dough and empanadas. Annatto paste is also used to season sofrito, the aromatic mixture that is the foundation of many Latin and Caribbean dishes. Yucatan's famous slow-roasted pork dish, cochinita pibil, owes its amazing flavor to an overnight rub of the paste mixed with citrus juices. Amazing Seasoning You Should Try
This seasoning popped up as an ingredient in a recipe I was trying. I was happy when I found it at Walmart and could include it in my weekly delivery.
