Great work

Because Americans just dont have the ability to buy most authentic Irish ingredients, the book's author gives plenty of current and useful advice on how to approach products in an American supermarket. There is great Irish cooking history in this title as well. I loved learning that traditional Irish cooking was more in the style of the French country cooking style. That is, most of our American knowledge of Irish food is largely based on our own family histories, coming largely from a people who had escaped the famines of the time period, and had come to America. Even if youre not a history fan, the recipes are thoughtful, authentic, and true. Techniques such as lapping the cooking oil up on top of the yolk of an egg while frying in minimal oil, for instance, is just a pure Irish technique. You honestly arent going to find this anywhere else. I would rate this 10 stars. to be honest.
