So, this is probably the best oil on earth. It contains transcinnameldehyde, which is good for the brain, based on what I remember, and there's only one other known source on earth: cinnamon bark. This oil smells less than desirable, but when you cook it, your food never tasted so good! I liken it to heme, which is I think iron in food that makes red meat more appealing than, say, chicken. So I used this in conjunction with EVOO for my chicken and it came out tasting as savory as beef! The scientists at Burger King determined the element needed to make their plant burgers taste like beef was heme, so that's why I suspect it's in this perilla oil too!
