poor quality control

usually usually these are perfect, but the butcher really made a mistake and gave me a lousy one. because I use grocery pickup. I couldn't pick this out personally, but one of the pork chops was all mangled and 2/3 the size of the other five. very disappointed.

good with gravy and peppers

I buy these chops regularly. They aren't as thick as the ones from Sam's Club, but they're pretty good. I usually cook mine with peppers and onions. I make up some brown gravy and pour that over them when they're done. You can add it dry, but I have a hard time keeping it from getting clumpy. I drain any excess juice off or I'll make the gravy with less liquid than it calls for, and then mix it up in the pan. You don't want to overcook them. They get rubbery and just not enjoyable.
