Softasilk Cake Flour is pre-sifted. Simply spoon the flour lightly into a measuring cup and level with a spatula or knife. To substitute softasilk cake flour for all purpose flour, use 1 cup plus 2 tablespoons of cake flour for each cup of all purpose flour in the recipe. The Secret to Perfect Cake
First time I've ever used cake flour. My cupcakes were light as air, perfectly fluffy and tender. I will never use All Purpose flour for cake again. Cake flour has less protein, uses a softer wheat for less gluten, which equals a tender crumb. Absolutely worth buying. Major difference in taste, and texture. If you're tired of your cakes tasting dry and heavy, this is the answer.
