A good alternative to other broths
I read somewhere that using umami in recipes can add a quality that's pretty incredible. So not finding the umami or miso paste I was hoping to get, I bought this broth. It did not disappoint. I make soups quite regularly and usually reach for chicken broth (over beef) because it's not too bold but still flavourful. This however adds a depth without fighting. It doesn't overpower like beef broth sometimes does. It just gives a extra oomph to my soups. I'll still use chicken broth for soups where a subtle background is better - like pumpkin, ginger, granny smith apple soup, coconut milk (it's to die for with Ro-Tel, or a chili paste added for an extra kick). For soups like that, I want those ingredients to pop. But in my cabbage roll soup or other similar ones, the miso broth is my go-to.
