Soy sauce provides a “fifth flavor” known as umami (or savory), but it is mainly for SALT so be smart and avoid “low sodium” so-called “soy sauce”. I have no idea what they put into it, but it's obvious what they LEAVE OUT… the thing you use it for: SALT. But this one is all the bang (great taste) and half the bucks. I avoid “Kikkoman” soy sauce completely because 2) twice as expensive and 2) tastes terrible.. just buy this one

One instance- Recipe Drop! Cured Seafood: Like people smoke things to kill bacteria, salt does the same thing. This soy sauce just adds extra flavor. So pick your favorite sweet marinade (I use a sweet teriyaki or unagi). Go 50/50 sweet marinade and great value soy sauce. Mix well and marinate your TUNA or SALMON filet for 48 hours, not chicken.
