Oh. MY!!! I now get why olive oil is such a big thing in the traditional cooking of so many cultures. I did try tasting this olive oil on its own and it does have a smooth, clean and slightly peppery taste. Where this olive oil absolutely shines, however, is when you put it over something like a really good home grown tomato or a good heirloom tomato if you can find them in a grocers or at a farmer's market. Cube that tomato, sprinkle on your favorite sea salt, drizzle this over the top and sprinkle just a bit of red wine vinegar (or good balsamic, if you have it) over the top with a quick grind of black pepper and you have absolute AMBROSIA. Don't forget to use a slice or two of good, whole grain and seed bread to soak up the goodness of the tomato juice combined with the oil and vinegar. BRILLIANT!!! *chef's kiss* I am definitely going to try my hand at making spaghetti aglio e olio as soon as I can pick up some fresh garlic, this oil's slight pepperiness will be absolutely PERFECT for it. I'm really glad I ordered the two bottle pack!
