I love canned yellow wax beans! They are always handy for a quick yellow vegetable at dinner and they are wonderful in our favorite, Easy Bean Salad. Want a salad you can prepare the day before and it is still fresh? I use three cans Walmart yellow wax beans, three cans Walmart green beans, all drained (save liquor for soup). Toss beans with one medium to large sweet onion sliced thinly, cover in sweetened vinegar dressing, and chill overnight. It is a winner!

I honestly thought that Wax Beans were extinct. I, nor my wife could find them anywhere. Then while we were shopping at Walmart, I was going down the veggie aisle as usual, all the while hoping that there might be a "Can" of wax beans.
