This product solves 2 problems. Stored food will take up less space, while staying fresh longer. The vacuum pump is much smaller than I expected, but it really does the job. The first thing we tried was a large tub of baby spinach which was way too large to fit in our refrigerator. After stuffing all of it into one of the larger bags, it only took a few seconds to suck it into a thin green pancake. We also put cooked beets into a smaller bag, and some Persian cucumbers into another bag. In each case it only took a few seconds to suck all the air out. One thing you should know is there is a raised molded round step on the bag valves. This is to center the pump asurring a good seal between the valve and the vacuum pump. In my opinion, don't store the vacuum pump where the seal could possibly be scratched, which could ruin it. In case you wonder why this system works so well to preserve food, is air is 80% nitrogen gas which is inert, and about 20 % oxygen which is what causes your food you go bad. The more air you can remove, the less oxygen will be in contact with your food. I think this is a cool device.
