WHY IS THE WATER STORED IN A TERRACOTTA PITCHER COOL AND HOW DOES IT TASTE SO DELICIOUS? The most important feature of the terracotta is having small pores on its surface. The water inside leaks slightly through these pores. Leaking water evaporates by taking the heat on the surface of the bottle and lowering the temperature of the water.
