While being cured in controlled heat chambers, the garlic undergoes the Maillard reaction transforming the garlic completely. Through this transformation, the antioxidants of the black garlic doubles the antioxidants found in normal black garlic. Black garlic originated in Asia and is now all the rage here in the States. Black garlic's popularity spread all across the country while being highly sought-after for its use in high-end cuisines. Unlike regular garlic, black garlic is sweet and mild like balsamic vinegar or tamarind. It's the perfect combination of sweet and savory. Now USDA Organic certified!
