FUD Oaxaca Mexican-Style String Cheese, Refrigerated, Fully Cooked, Ready-to-Eat, 12 oz Pack, 12 Servings

24 years ago I was invited to a Party Lite party. (Remember that pyramid scheme?) One of the other guests brought her homemade enchiladas, she was from Peru. These enchiladas rocked my world. It was the CHEESE. I had never tasted anything like it. The cheese is like a rich silky soft mozzarella, but maintains a thick gooey melty firmness, even after it cools a little bit. It doesn't disappear into the food. It is the FUD. The taste is very specific. Mozzarella to me has always been disappointing and plain. It's not really salty or sweet, it's just chewy dairy. This specific FUD brand Oaxaca cheese tastes different than all other Oaxaca cheeses. It has a sweet, buttery, rich, almost slightly nutty flavor that sings! I randomly bought this for a recipe and when I tasted it, BAM!!! I was immediately back at that Party Lite party 24 years ago. I almost cried because it was a memory revived so vividly!! I can't recommend this cheese enough. And it's perfect for snacking and kids. It's in a fun knot, and peels like a cheese stick!
