The Victorinox Fibrox Pro 12" Granton Slicing Knife is a long slicing specialist, made from a precision-stamped high carbon stainless steel blade. Fibrox knives undergo a special tempering process that improves the blades' sharpness and ability to take a new edge. The 12" blade is absolutely straight and thin with a super-sharp 15° bevel per side, and the depth of the blade stays constant all the way to the rounded tip. A Granton edge reduces the drag and sticking caused by water adhesion and the long length accommodates straight, contiguous pull-slices. Ideal for slicing boneless roasts or cured salmon, skinning salmon, or slicing cakes into even layers. The blade is hand finished and polished at Victorinox in Switzerland by skilled craftsmen.
