C and H is the only sugar I will bake with. It is a cane sugar, not a beet sugar. I dont care that some say there is no difference in the finished product when using beet sugar VS cane . There is a difference! I trust my baking to Cane sugar only. If I am spending time to scratch bake , C and H is my trusted brand. Plastic packaging with single seal dosent seal well enough . I end up with a solid lump of brown sugar. watch your seal

Not as dark as they used to be!

Ever since the pandemic, it's SO hard to find true dark brown sugar!!! Did molasses die from Covid?? Anyway, I cannot believe the negative reviews about hard brown sugar!!! Mine was soft (this time). ANY sugar, salt and other crystalized item can turn into a sandy rock, especially on humid days. After I store my brown sugar, if not taken care of properly, it WILL harden in the container! However, This is a very old kitchen tip!!! Get a container, I have a quart size blue glass mason jar but any plastic container will work just as well - just big enough to hold entire bag of sugar. Dump the brown sugar in there, even if you have to break it up into big chunks with a very pointed knife, or awl, even a fork. Then take a heal of bread and just lay it on the top of the brown sugar and close the lid. The brown sugar soaks up the little bit of moisture in the bread and softens up just like brand new. The bread will be complete desiccated (untoasted) toast! The sugar will stay soft a while and just pull the bread out, throw it away and put a new slice in. If you are using a mason jar, you will only be able to fit a 1/2 slice in. Make sure it's narrow enough to fit into the mouth of the container, otherwise it will break while pulling it out and you will have to fish for the broken pieces. Just like honey! It gets cool, it crystalizes! DO NOT THROW IT AWAY!!! Run warm water on it, or put it a bowl of hot water. Now, to avoid this issue all-together, I keep mine on top of the fridge - "just enough" heat to keep it from ever crystalizing.
