Good sweet tooth choice for my wife.

My wife has type 2 Diabetes and this brand of cookie does not spike her sugar like other sweet treats. She was not a peanut butter cookie fan. She tried it and liked the taste. Plus to satisfy her sweet tooth and not spike her sugar like other items she eats was a win win for her.

Use butter instead of oil!

I love these cookies. I substitute 3 tbs melted butter for oil and it makes a big difference. The real trick is to not over cook them. Ten minutes at 350 is perfect. They may seem under done when you take them out but once they cool they are perfect.
