I cook these and use them for spring rolls. It is easy to break off the amount that you need. I store mine in a resealable bag in the pantry once opened. You can boil them with a little bouillion powder for added flavor. They cook very quickly (2 minutes maybe). They would be good to use in Pho, but they are thinner than what you would get at a restaruant, so I would only suggest putting what you need in individual bowls, rather than putting them all in a pot, as I imagine they would dissentigrate or get overly mushy.
