Sharp scissors but...
They are very sharp. If you open fully like when cleaning they come completely apart every time - a little too easily. You might like that in commercial restaurant but I don't for home use. If you don't pull apart and dry all the metal immediately they'll rust like mine have in less than a month. I use every day for cutting no use for the can opener etc.
