I've been on a personal quest to find a hot sauce that brings serious heat without relying on vinegar as a crutch. I picked up this 14 oz bottle of Matouk's largely because I kept seeing it mentioned in forums as the "real deal" for Caribbean-style heat. First thing I noticed when it arrived was the consistency. This isn't your standard thin, vinegary Louisiana-style sauce. It's much thicker, almost like a smooth salsa or a spicy condiment. It's packed with Scotch Bonnet peppers, and you can definitely tell from the first taste. The heat builds steadily and lingers warmly, but it isn't just a one-note explosion of fire. There's a depth to it—a slight sweetness and earthiness that balances the peppers out. I mostly bought this to liven up my weekday lunches. I tried it on some leftover rice and beans, and it was a perfect match. It also cut through the richness of a rotisserie chicken really well. My only minor complaint is that because it's so thick, getting the last bit out of the bottle might require some patience (or a spatula). It also has a very distinct, pungent aroma when you open it that might be a bit much if you're sensitive to smells. I have a feeling this bottle is going to last me a while because a little definitely goes a long way. I'm hoping it stays fresh in the fridge for the next few months as I work my way through it. By far the best choice of the Caribbean for hot sauce it's Trinidadian scotch bonnet, which is all it needs to be set. When using it in any amount makes you feel that you're cooking in the Caribbean with the breeze enjoy.
