Spice level: 'Why is my forehead sweating?'
I've been on a personal quest to find a hot sauce that brings serious heat without relying on vinegar as a crutch. I picked up this 14 oz bottle of Matouk's largely because I kept seeing it mentioned in forums as the "real deal" for Caribbean-style heat. First thing I noticed when it arrived was the consistency. This isn't your standard thin, vinegary Louisiana-style sauce. It's much thicker, almost like a smooth salsa or a spicy condiment. It's packed with Scotch Bonnet peppers, and you can definitely tell from the first taste. The heat builds steadily and lingers warmly, but it isn't just a one-note explosion of fire. There's a depth to it—a slight sweetness and earthiness that balances the peppers out. I mostly bought this to liven up my weekday lunches. I tried it on some leftover rice and beans, and it was a perfect match. It also cut through the richness of a rotisserie chicken really well. My only minor complaint is that because it's so thick, getting the last bit out of the bottle might require some patience (or a spatula). It also has a very distinct, pungent aroma when you open it that might be a bit much if you're sensitive to smells. I have a feeling this bottle is going to last me a while because a little definitely goes a long way. I'm hoping it stays fresh in the fridge for the next few months as I work my way through it. If you're tired of sauces that just taste like pepper-flavored vinegar, this is a solid choice.
