2-1/2" Long Blade, Stainless Steel, Fine Edge, Paring Knife

The Clauss 2.5" Paring Knife is a wonderful addition to my knife drawer. Many years ago I had a paring knife but it disappeared and I always meant to replace it. This new knife is perfect, especially if you have small hands. I find it very easy to control and it has kept its sharp edge for several weeks now. I use it mainly for peeling potatoes, but it is also good for cutting fat off of meat without losing any of the meat and for slicing cheese. This knife has a textured anti-bacterial treated handle which fits well in my hand and doesn't get slippery when it gets wet. A pairing knife is such a small thing that it is usually overlooked in the kitchen. This knife is perfect for my needs. The knife feels natural in my hand. The handle material is just grippey enough.
